Cynthia's Famous Fried Rice
FRIED RICE
3 eggs, beaten
1 carrot, peeled and grated
3 green onions, chopped into 1 inch pieces
3 cups cooked rice (I use leftover rice that’s been in the fridge)
Soy sauce, enough to color the rice a light brown
½ cup frozen peas
Oil
Heat a light coating of oil in wok or large fry skillet.
Pour eggs into hot oil and scramble. Remove to a plate.
Add another light coating of oil and heat.
Stir fry onions and carrots. Remove to the plate with eggs.
Add a bit more oil and heat.
Stir fry rice until very lightly browned.
Add soy sauce to color.
Add eggs and vegetables.
Add peas.
Toss all ingredients together and cook just long enough for peas to heat.
